Cassava Cake is one of the delicious sweet treat in the Philippines. The important ingredient for Cassava Cake is the Yucca. Yucca needs to be grated and squeezed to make the Yucca dry enough to mix with milk, coconut milk and eggs. It takes time to make Cassava Cake.
Now, I craved for Cassava Cake but I'm baking Cassava Cake using Cassava Flour. The texture of my Cassava Cake will be cake texture but it will satisfy the craving for Filipino Cassava Cake.
Here is the Recipe.
Cassava Cake Recipe using Cassava Flour
Ingredients:
2 cups Cassava Flour
1 cup sugar
1/2 cup evaporated milk
1/2 cup coconut milk
1 cup sweetened coconut (Baker's moist)- I prefer to use macapuno
2 pcs eggs (yolk, whites separate)
2 tsps. baking powder
1/2 butter
1/2 tsp. vanilla
Toppings:
3 egg yolks
1/3 cup sweetened condensed milk
2/3 cup coconut milk
Instructions:
1. Pre heat oven to 325°F.
2. Mix cassava flour and baking powder and set aside.
3. In mixing bowl, cream butter until smooth then slowly add sugar mix well.
4. Add egg yolks, all dry ingredients and milks. Mix thoroughly until well blended.
5. In separate bowl, beat the egg white until stiff peak forms.
6. Fold the flour batter to the beaten egg whites.
7. Pour the mixture to ungreased baking pan and bake it for 20 to 30 mins. (depend on your oven, mine about 20 mins. my cassava cake was done).
8. After 20 mins. baking, pour the toppings and bake for another 20 mins.
9. Allow to cool. Every serving you can add cheese on it. Yum!
