Cassava Cake Goldilocks Recipe. I had Cassava Cake Recipe using Cassava Flour but seriously, Cassava Cake using Cassava Flour recipe can’t beat the Cassava Cake (using grated yucca), right? My Cassava Cake Recipe is from Goldilocks Bakebook. Goldilocks released a book for it’s 50 Golden Years of being country’s(Philippines) number 1 bakeshop, they’re generous, they shared their history and their recipe that is best-loved by Filipino people. My Cassava Cake Recipe has a little change in ingredient, Goldilocks recipe called for macapuno but I used Bakers Sweetened Coconut (moist and soft). The Goldilocks cassava cake recipe called for margarine, but I used butter. Even if there's changes, it came out perfect Cassava Cake, the foundation of good Cassava Cake is; cassava is cooked then baked. No need to beat egg and reach stiff peaks. INGREDIENTS
Grated Cassava 1 1/2 cups
Water 1 1/2 cups
Coconut Milk 1/2 cup
Condensed Milk 1 can
Sugar 1/2 cup
Macapuno Strings
or Bakers Sweetened Coconut 1/4 cup
Egg 1 large egg
Vanilla flavor 2 tsp
Grated Cheese 1/2 cup
Margarine or butter 2 Tbsp
TOPPINGS
Evaporated Milk 2 tbsp
Egg beaten 2 tbsp
Macapuno strings
or bakers sweetened coconut 1/4 cup
PROCEDURE
Pre-heat oven to 350°F
Prepare aluminum pan and set aside.
Place grated cassava on a cheesecloth then squeeze out some of the juice. Discard the juice.
In a blender, combine gated cassava, half of the water, coconut milk, condensed milk, and sugar, then grind. Set aside.
Prepare a non-stick skillet, combine grated cassava mixture, macapuno strings (I used sweetened coconut), egg, vanilla flavor, the remaining water and half of the grated cheese. Place over medium fire and start mixing until you reach translucent texture.
Once cassava is translucent, reduce to low fire. Add margarine (I used butter) and the remaining cheese. Continue cooking until thick.
Turn off the fire and equally distribute the cooked cassava into the prepared aluminum pan.
For toppings- Combine the evaporated milk, beaten egg and macapuno strings mixture.
Pour toppings to the cassava.
Bake the cassava for approximately 35-40 minutes or until top is golden brown.
