NOT YOUR SAVORY CHEESE MUFFINS RECIPE

 Yes, this is not your savory Cheese Muffin Recipe. This is the Cheese Muffins that have condensed milk that make this muffin sweet. This is Filipino cheese cupcake recipe. A cupcake that is the best partner for coffee. The Filipino cheese cupcake is not airy, not fluffy but soft because I add lemon juice in it. In the Philippines we call it cheese cupcake but my cheese cupcake, I call it Not Savory Cheese Muffins. This recipe is from food.com. If you want to visit the website and just search for pinoy cheese cupcakes. Usually, cheese cupcakes Pinoy style are a bit tough, dry because the wet ingredient is condensed milk which is thick. Now, I made a little revision for this recipe which make Cheese Cupcakes moist and soft. I made kind of buttermilk mixture with 1 can condensed milk and 1 Tbsp. lemon juice let set for 5 minutes then mix. Bake for 18 minutes.



Ingredients:

1 3/4 cups flour
1 condensed milk
2 tsps. baking powder
1/4 salt
1/2 cup unsalted butter
1/2 cup granulated sugar
2 eggs
1 Tbsp lemon juice
1/2 cheddar cheese
1/2 cheddar cheese (for toppings)
1 tsp. vanilla extract

Procedures:

1. Preheat oven at 350°F
2. In a mixing bowl, combine flour, baking powder and salt.
3. In a stand mixer beat butter and sugar until light and fluffy, then add eggs and lemon juice.
4. Alternate pour the flour and condensed milk mixture, start with flour and condensed milk to the butter mixture.
5. Then fold cheese to the batter
6. Put in muffin cups 3/4 cup full.
7. Bake it for 18-20 mins.

Milk Chocolate Coffee Crinkle Recipe

Do you love coffee, chocolate,  cookies? Why not merge those favorite flavors into one cookie recipe. I would like to share with you my Milk Chocolate Coffee Crinkle Cookie Recipe. Many different kinds of crinkle cookies emerge but why not try these chocolate and coffee mixes, right? A mixture of milk chocolate and coffee is mocha. After I finished baking my crinkles smelled mocha. I think I mix too much coffee with my milk chocolate coffee crinkle cookies. It depends how much coffee you want. I used ¼ cup coffee granules. Here is the recipe if you’re interested in making your fresh milk chocolate coffee crinkle cookies and be happy, a good partner for a cup of coffee.



Ingredients

1 1/2 cups flour
1/4 cup granulated coffee 
8 oz milk chocolate 
4 Tbsps unsalted butter
1/2 cup granulated sugar
1 eggs
1 tsp vanilla extract
1/4 tsp salt
1/2 baking powder
1 cup confectioner sugar

Procedure:

1. Preheat the oven at 325°F.
2. A medium bowl whisk flour, salt, and baking powder.
3. In a separate bowl add chocolate, coffee and butter for 1 minute., and mix and let it cool.
4. Whisk sugar and eggs until pale and fluffy.
5. Then add the chocolate mixture and vanilla, then add the flour and mix.
6. Refrigerate the dough for 30 mins or more.
7. Use the 1 Tbsp cookie scooper to scoop the dough and dip into confectioner sugar.
8. Bake it 8 to 10 mins. Don't over bake. You need to transfer the cookies into wire rack as soon as possible to avoid dryness and to avoid tough crinkle cookies.

How to Cook Chayote

I would like to introduce to you Chayote. We all know that Chayote is a vegetable but I searched chayote at Wikipedia and came out that Chayote is fruit, family of squash, Chayote is good source of Vitamin C.




I remember before we had a small store selling fruits and cooked food. My parents always wake in the morning and go to Divisoria (a place in Manila where the majority of the goods they’re selling are cheap).

My mother was cooking meat and vegetables to sell. I always assist my mother when she’s cooking food to sell. I always observed how my mother cooked, one time I asked my mother if I could cook chayote. My mother said yes and she allowed me to cook chayote. I did cook chayote but as I remember the chayote that I cooked was salty. Didn’t sell much because it didn’t sell much but it’s my learning experience in cooking.


How to Cook Chayote (Sayote)

Ingredients:

2 pcs. chayote (sayote)

1/2 ground pork

1 medium carrots

7 cloves garlic

1 pc onion

1 bell pepper

soy sauce

salt and pepper to taste


Procedure:

1. In a pan, heat up oil.

2. Saute onion until translucent, then add garlic.

3. After garlic a little brown add the meat.

4. When meat turned brown, add a little water and let it simmer.

5. Add Chayote and carrots, let it simmer when vegetable darken it's already cooked.

6. Add sweets peppers.

7. Add salt and pepper to taste.
