RAISIN BREAD PUDDING


Are you looking for good partner of your coffee? Well bread pudding is one of the favorite bread partner for your coffee. Bread pudding will be savory or sweet which many of us been familiar with. Many people have different version on how to make their bread pudding.

Wikipedia's meaning of bread pudding - Bread pudding is a bread-based dessert popular in many countries' cuisines, made with stale bread and milk or cream, generally containing eggs, a form of fat such as oil, butter or suet, and depending on whether the pudding is sweet or savory, a variety of other ingredients


Yes, bread pudding is giving stale bread a chance to be reborn, just kidding. And now I have bread pudding too. A raisin bread pudding, actually it's Nestle's Raisin Bread Pudding Recipe. I just want to share with you.



INGREDIENTS:



16   slices bread, cubed

1     cup raisins
2     evaporated milk
4     large eggs, slightly beaten
3/4  cup packed brown sugar
1/4  cup melted butter
2     tsps. vanilla extract
1     tsp. ground cinnamon
1/2  tsp. ground nutmeg
Caramel sauce (optional)


INSTRUCTIONS:



Preheat oven 350°F. Grease 12 x 8 inch baking dish.


Combine bread and raisins in large bowl.


Combined evaporated milk, eggs, sugar, butter, vanilla extract, cinnamon and nutmeg in medium bowl.



Pour egg mixture over bread mixture combine well. 



Pour mixture into prepared baking dish. Let stand for 10 minutes.



Bake for 35 to 45 minutes or until knife inserted in center comes out clean. Mine I baked it for 35 minutes just right. 



Drizzle with caramel sauce before serving. Mine just forgot to put caramel but caramel make a big difference.

HOMEMADE PEANUT BRITTLE

Airy and crunchy peanut brittle

Peanut brittle a favorite candy during Christmas time. For me, you can make it all the time, I usually make peanut brittle when I have market. I received good compliments for my peanut brittle and I really appreciate that.

I would like to share with a peanut brittle that airy and crunchy you will not stop to nibble. The secret of delicious peanut brittle, you start with clean utensils because you’ll be cooking your sugar for a long time and if you have something in your sugar syrup it will be burn and it will ruin your peanut brittle. Your baking soda should be new so that it bubbles easily when you mix with sugar. When you pour the mixture of sugar syrup, peanut, baking soda to the cookie sheet don’t stir leave it alone, let the brittle mixture crawl itself. That is the secret of airy and crunchy peanut brittle.

PEANUT BRITTLE RECIPE

Ingredients:

1 cup water
1 cup light Karo corn syrup
2 cups granulated sugar
1 ½ roasted peanut
¼ teaspoon salt
2 tablespoons butter
2 teaspoons baking soda

Directions:

Spread 1 tbsp. of butter to the cookie sheet.

Put water, Karo syrup and sugar to your sauce pan.

Place a candy thermometer to the side of the sauce pan.

Heat on high and boil until you reach soft ball stage 238°F.

When you reach 238°F you can add the butter and salt.

When you reach 310°F you can add the peanut and stir, then add baking soda and stir it will bubble and then put the mixture to the greased cookie sheet and no stir after you pour mixture to the cookie sheet.

Peanut brittle for Christmas, Enjoy!!!

PEACH COBBLER RECIPE




Peach Cobbler is one the popular dessert here in Texas. My husband and I like peach cobbler. I made peach cobbler to sell at farmers market and it’s always sold out. A balance of right amount peaches and right amount of dough is the secret of my peach cobbler. Some peach cobbler that we ordered from the restaurant or some take out restaurant majority of their peach cobbler is really doughy not much peaches mix in it. My recipe is homemade peach cobbler recipe. I want to share with you so that you can make your own peach cobbler for your family. I promise; you will love my recipe. Ingredients:

1 stick butter
1 ½ cups self-rising flour
½ cup water
2 cups divided sugar
4 cups peeled and sliced peaches
1 ½ cups milk
Pinch of ground cinnamon

Directions:

Preheat oven to 350°F.

Combine the peaches, 1 cup sugar, water in a saucepan, mix well. Let is simmer for 10 minutes, then remove from heat.

Put the butter in a 9x13” aluminum pan and place in oven to melt.

Mix the remaining 1 cup sugar, flour, milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir.

Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, the batter will rise to top during baking.

Bake for 30 to 45 minutes.

Serve with vanilla ice cream. Happy Eating!!!

Strawberry Cheesecake w/ Strawberry toppings



When I'm young I really like cheesecake but I don't have money to buy for it but now I can bake my own homemade cheesecake. My strawberry cheesecake recipe can make one round pan same as top picture and 6 cupcakes for cheesecake. I really love cheesecake and this recipe is very delicious and here's my recipe.

Ingredients:

Graham mold ready for cheesecake filling
2 8oz cream cheese, softened
1 tbsp. all purpose flour
1 can condensed milk
1/4 cup sour cream
1 tsp vanilla extract
2 egg yolks
2 tbsp. sugar
strawberry toppings in can

Instructions:

Heat oven to 325°F.

Beat cream cheese, flour, 2 tbsp. sugar in medium speed using stand mixer, mix it until fluffy.

Add in 2 egg yolks mix until incorporated.

Beat in condensed milk, sour cream and vanilla until smooth.

Then transfer the mixture to graham pan that is ready. Get a roast pan put hot water in it then put the cheesecake pan mixture like baking with water bath for 1 hour.

Then when it's ready, let it cool at room temperature and then put strawberry toppings and keep in the refrigerator.

Banana Bread Recipe Latest Version

Banana Bread w/ Vanilla Frosting


I would like to share my banana bread recipe. This a moist banana bread I’ve ever made. I always make this banana bread recipe when I have farmers market, when I have banana that looks like over ripen it’s automatic, I will make banana bread for that ripen banana.

Ingredients:

1 stick of butter
1 cup sugar
2 large eggs
1 ½ unbleached flour
1 tsp. baking soda
1 tsp. salt
1 cup mashed bananas
½ cup sour cream
1 tsp. pure vanilla extract
½ cup chopped walnuts

Directions:

1.  Preheat oven to 350°F. The recipe can make 4 mini loaf pans. Butter the mini loaf pans and set aside. With your electric mixer with paddle attachment cream butter and sugar until light and fluffy then add eggs until incorporated.

2.  In another bowl, mix together the flour, baking soda and salt then add to the butter mixture mix until just combined. Add sour cream, bananas and vanilla then mix. Then stir in walnuts and pour into prepared pans.

3.  Bake for 30 to 35 minutes. Sometimes baking for 30 minutes it’s done already but it depends on your oven. The 30 to 35 minutes is the threshold to check the banana bread and use your toothpick to test if it’s done.

Note:
Banana bread will last for 2 days on the counter put in the container and cover to maintain freshness of the banana bread. But when you put frosting to your banana bread like what I did with my picture you need to put it inside the refrigerator.

Egg Pie

One of my favorite dessert is an egg pie. I ate a lot these when I'm young as usual I really ate too much. It's delicious, very light texture. It's my first time to make egg pie and I'm excited to make my own egg pie and taste and of course share recipe to all of you.

Ingredients:

Crust:

*  2  cups all purpose flour
*  3  Tbsp sugar
*  1/2  tsp salt
*  3/4  cup unsalted butter soften
*  1/4  cold water

Filling:

*  1  cup evaporated milk
*  5  eggs - (4 eggs + 1 egg separated of egg white and egg yolk)
*  1 tsp vanilla extract
*  1 tsp lemon juice
*  1 can condensed milk

Instructions:

Crust:

1.  Combine the crust ingredients into food processor, make a pulse until you see the side of the processor clean that's the time you know you have perfect crust.

2.  Shape into a ball put in plastic wrap and refrigerate it for 30 minutes.

3.  Sprinkle flour into flat surface and put the refrigerated dough then roll the rolling pin to the dough to make 1/2 cm. thick and  9" wide cover the pie pan. Make a crimp for the dough siding.

4.  Keep the dough at the refrigerator.

Filling:

1.  Heat evaporated milk for 1 minute.

2.  In a mixing bowl, whisk 4 eggs and 1 egg yolk, then add condensed milk, vanilla extract and lemon juice until combined.

3.  Add evaporated milk to the mixture.

4.  In another bowl, whisk egg white until in it's soft peak.

5.  Fold the beaten egg white into the mixture.


Baking:

1.  Preheat oven to 350°F.

2.  Pour the filling into pie crust.

3.  Bake for 15 minutes at 350°F, and lower the heat at 325°F then let it bake for another 40-45 minutes. Toothpick testing if it's done.






Homemade Peanut Butter

Ingredients

- 1 kilo peeled unroasted peanuts
- 2 cups sugar
- 1/4 vegetable oil
- pinch of salt

Instructions

1. Heat a thick pan at low heat then put peanuts.
2. Stir the peanuts once in a while it takes about 15 to 20 minutes. Then let it cool.
3. Then put cooled peanut, vegetable oil, sugar, salt into food processor.
4. Process the mixture until it's very smooth.

I baked Potato Onion Bread. I think potato and onion is a great combination of flavor for my bread. It’s my first time to bake this bread but it came out soft, airy and crusty in the outside and smells good. Usually when baked bread or cupcakes I taste it first. Sometimes one of my friends ordered 24 pieces cupcakes and I delivered 23 pcs and told her I ate 1 pc and you pay dollar less. I want to make sure my baked goods are delicious and taste good. If it don’t taste good I will re-do that baked goods. You noticed, I have potato onion breads and the other bread was half eaten by me for taste test. Funny, my taste test required a lot of tasting and consumed too much that’s why I gained weight.

Everybody loves coffee, the smell of coffee it makes you awake and the feeling of alertness for your morning routine. A hint of coffee in everything I ate it really excites me. I liked coffee candy. I like mocha flavor coz it's a mixture of coffee and coco. But now I would like to make partner for my coffee, as if far from my introduction of coffee I'm making Chocolate Espresso Cupcakes. My Farmers Market Experience.



 I just joined Jim Wells Farmers Market year 2015, as I remembered. Joining Jim Wells Farmers Market was my first time to sell my baked goods the manager at Jim Wells Farmers Market, Ms. Elaine was really nice to me even I only have small table full of baked goods she always took picture of my baked goods for sale, maybe Ms. Elain really know I worked hard for my baked goods.

On my part joining farmers market selling my baked goods was a gamble sometimes, a HIT or  a MISS when it’s hit, it’s worth the effort to be busy Friday all day just to prepare all my baking stuff, go to bed at 12 midnight then set an alarm at 3:00am to bake and package all the stuff. It’s my routine when I’m preparing for farmers market.

I don’t advertise much coz I only have enough baked goods just to fill up my 5 ft. table. When I sell at Jim Wells Farmers Market, I just depend on Ms. Elaine’s advertisement, taking picture of my baked goods. 

I still participate Farmers Market, I know next time I will participate market I will have more SALES, be optimistic. yey!!!

Banana bread

Delicious banana breads


I would like to share my experience in baking of my delicious baked goods. I will start from all ingredients needed for one recipe, it’s easy. Next, will be the mixing all the ingredients and create a perfect batter for your perfect baked goods and then you bake.
The most important part of baking that you really need to be patient is the waiting time of cooling your baked goods. These banana breads it took awhile before it’s totally cool so that the bread will not be stale.
It took a lot of practice to baked a perfect banana cake and that’s what I’m doing always. Practice, practice and more practice so that I can create good food, quality baked goods.

Blueberry Muffins (fat free)


A perfect blueberry muffins for breakfast. The blueberry muffins has good taste not too much tangy. I recommend these Krusteaz bluerry muffin mix, a box can make a dozen blueberry muffins.
