 Election Cake? I just saw it on Facebook. The New York Times post about Election Cake, A recipe from Marion Cunningham. I can’t believe it, but I searched on Election Cake Recipe. It’s a vintage cake recipe. It was generally a yeast cake with spices and nuts added. Some recipes that I read say they add rhum with it. I just prefer a simple recipe as is. I made an Election Cake Recipe from Marion Cunningham. The cake recipe itself is a combination of yeast and baking soda, I’m kinda confused too. After I made the cake it tasted good, good spice and soft cake. This Election Cake is for all American people that exercise their rights to vote, whoever they bet for president. American have spoken and that’s Amazing.

King Ranch Chicken Casserole Recipe

 King Ranch Chicken Casserole, a chicken recipe that I always make for my husband. He liked it. This recipe is from Southern Living online, it really tastes good. With mine, I just used a small glass pan, I think with southern living it needs a little big pan. Like what I said before I always look for a recipe and try to make it and if it’s worth sharing it will be included to my blog. You can look for King ranch Chicken Casserole Recipe at Southern living. Here is my take. Super easy to make.

Ingredients:

1 chopped green bell pepper
1 chopped onion
2 tbsps vegetable oil
2 cups chopped cooked chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1 can diced totato and green chiles
1 tsp chili powder
1/4 tsp salt
2 pinces garlic powder
2 pinces pepper
12 corn tortillas, torn into pieces
2 cups grated cheddar cheese

Procedure:

1. In a large skillet saute bell pepper for 5 mins. Stir in chicken and all of the ingredients.

2. Layer one-third of torn tortillas in bottom of a lightly greased 13 x 9 inc baking dish. Top with chicken mixture and cheese. Repeat layering.

3. Bake at 350°F for 30 to 35 mins.

NOT YOUR SAVORY CHEESE MUFFINS RECIPE

 Yes, this is not your savory Cheese Muffin Recipe. This is the Cheese Muffins that have condensed milk that make this muffin sweet. This is Filipino cheese cupcake recipe. A cupcake that is the best partner for coffee. The Filipino cheese cupcake is not airy, not fluffy but soft because I add lemon juice in it. In the Philippines we call it cheese cupcake but my cheese cupcake, I call it Not Savory Cheese Muffins. This recipe is from food.com. If you want to visit the website and just search for pinoy cheese cupcakes. Usually, cheese cupcakes Pinoy style are a bit tough, dry because the wet ingredient is condensed milk which is thick. Now, I made a little revision for this recipe which make Cheese Cupcakes moist and soft. I made kind of buttermilk mixture with 1 can condensed milk and 1 Tbsp. lemon juice let set for 5 minutes then mix. Bake for 18 minutes.



Ingredients:

1 3/4 cups flour
1 condensed milk
2 tsps. baking powder
1/4 salt
1/2 cup unsalted butter
1/2 cup granulated sugar
2 eggs
1 Tbsp lemon juice
1/2 cheddar cheese
1/2 cheddar cheese (for toppings)
1 tsp. vanilla extract

Procedures:

1. Preheat oven at 350°F
2. In a mixing bowl, combine flour, baking powder and salt.
3. In a stand mixer beat butter and sugar until light and fluffy, then add eggs and lemon juice.
4. Alternate pour the flour and condensed milk mixture, start with flour and condensed milk to the butter mixture.
5. Then fold cheese to the batter
6. Put in muffin cups 3/4 cup full.
7. Bake it for 18-20 mins.

Milk Chocolate Coffee Crinkle Recipe

Do you love coffee, chocolate,  cookies? Why not merge those favorite flavors into one cookie recipe. I would like to share with you my Milk Chocolate Coffee Crinkle Cookie Recipe. Many different kinds of crinkle cookies emerge but why not try these chocolate and coffee mixes, right? A mixture of milk chocolate and coffee is mocha. After I finished baking my crinkles smelled mocha. I think I mix too much coffee with my milk chocolate coffee crinkle cookies. It depends how much coffee you want. I used ¼ cup coffee granules. Here is the recipe if you’re interested in making your fresh milk chocolate coffee crinkle cookies and be happy, a good partner for a cup of coffee.



Ingredients

1 1/2 cups flour
1/4 cup granulated coffee 
8 oz milk chocolate 
4 Tbsps unsalted butter
1/2 cup granulated sugar
1 eggs
1 tsp vanilla extract
1/4 tsp salt
1/2 baking powder
1 cup confectioner sugar

Procedure:

1. Preheat the oven at 325°F.
2. A medium bowl whisk flour, salt, and baking powder.
3. In a separate bowl add chocolate, coffee and butter for 1 minute., and mix and let it cool.
4. Whisk sugar and eggs until pale and fluffy.
5. Then add the chocolate mixture and vanilla, then add the flour and mix.
6. Refrigerate the dough for 30 mins or more.
7. Use the 1 Tbsp cookie scooper to scoop the dough and dip into confectioner sugar.
8. Bake it 8 to 10 mins. Don't over bake. You need to transfer the cookies into wire rack as soon as possible to avoid dryness and to avoid tough crinkle cookies.

How to Cook Chayote

I would like to introduce to you Chayote. We all know that Chayote is a vegetable but I searched chayote at Wikipedia and came out that Chayote is fruit, family of squash, Chayote is good source of Vitamin C.




I remember before we had a small store selling fruits and cooked food. My parents always wake in the morning and go to Divisoria (a place in Manila where the majority of the goods they’re selling are cheap).

My mother was cooking meat and vegetables to sell. I always assist my mother when she’s cooking food to sell. I always observed how my mother cooked, one time I asked my mother if I could cook chayote. My mother said yes and she allowed me to cook chayote. I did cook chayote but as I remember the chayote that I cooked was salty. Didn’t sell much because it didn’t sell much but it’s my learning experience in cooking.


How to Cook Chayote (Sayote)

Ingredients:

2 pcs. chayote (sayote)

1/2 ground pork

1 medium carrots

7 cloves garlic

1 pc onion

1 bell pepper

soy sauce

salt and pepper to taste


Procedure:

1. In a pan, heat up oil.

2. Saute onion until translucent, then add garlic.

3. After garlic a little brown add the meat.

4. When meat turned brown, add a little water and let it simmer.

5. Add Chayote and carrots, let it simmer when vegetable darken it's already cooked.

6. Add sweets peppers.

7. Add salt and pepper to taste.

Homemade Chicken Tocino Recipe

this with you. The chicken tocino tastes good. Here is the recipe.


Homemade Chicken Tocino


Ingredients:


1 kilo boneless chicken thighs

3 tbsps finely minced garlic

½ tbsp salt

½ tsp ground black pepper

3 tbsps brown sugar

⅔ cup pineapple juice

2 tsps soy sauce

2 tbsps oil


Procedure:


  1. Mix toger garlic, salt, ground pepper, brown sugar, pineapple juice, and soy sauce.

  2. Stir until well combined. 

  3. Add in chicken thighs and marinade it an hour or more.

  4. In a non-stick fryer, fry chicken into oil.

  5. Enjoy homemade chicken tocino a partner for your rice. Breakfast happy.

Pumpkin Filling Recipe for Empanada, Pie, and Hopia.

Pumpkin filling for pi, empanada, and hopia. It’s easy when you make pumpkin filling for a pie just mix all the ingredients and pour on your prepared pie crust. I always make this pumpkin pie filling for my pumpkin empanada and hopia. The challenge for pumpkin filling is, it takes a while to cook the pumpkin filling. It should not be soggy, it should not be too dry, just right to fill my empanada dough. Here is the recipe I want to share with you.



Pumpkin Filling Recipe


Ingredients:


2 cups pumpkin puree

1 cup sugar

1 tsp cinnamon

½ nutmeg

½ tsp ground ginger

½ tsp salt

2 eggs

1 ⅓ cups evaporated milk


Procedure:


In a bowl add sugar, spices and eggs. Whisk to combine until there’s no longer any lumps.

Add pumpkin puree and evaporated milk and whisk again until smoothen.

Prepare a pan, put ½ butter then pour the pumpkin puree mixture and cook it in medium heat for 1 ½ hour until the mixture is not watery. Mix occasionally to avoid burning of mixture.







Diced Hopia w/ Pumpkin Filling

 Making Diced Hopia no oven is needed. The regular filling for hopia are mung beans, sweet potato but mine is pumpkin because it’s Thanksgiving is getting near I think my diced hopia will be in season, right? The challenge is how to pump the right texture to fill the hopia dough. Pumpkin in a can is too watery. It takes a while to create the right texture of pumpkin filling. Diced hopia is easy to make, no need for an oven, it will be good business coz you can sell it warm to your customer as long as you have a thick pan or a griddle.


How to Make Diced Hopia

Ingredients:

3 cups all purpose flour
1/4 cup white sugar
1/2 cup vegetable oil
3/4 cup water
1/2 cup margarine, non-hydrogenated
1 tbsp vanilla
golden yellow food color (optional)

Procedure:

Combine all the ingredients.
Knead to form a dough.
Then equally divided the dough into 32 pcs.
Fill the dough with pumpkin.
Put hopia to griddle or cast iron let it heat up till it turn brown.
Flip the hopia from top and bottom, then side to side.

How to make bilo bilo para sa ginataang halo halo

I want to eat ginataang halo halo i bought saging na saba, kamote, glutinous rice. I did not complete the recipe for ginataang halo halo but I’m alright with that. Asian Market is far from our place. I buy everything I need because it takes a while before the next trip to Asian Market. I just made my own bilo bilo for my ginataang halo halo. The good thing in making your own bilo bilo is you make bilo bilo fresh, because sometimes when you buy bilo bilo at store it's stale. That's why we need to make our own bilo bilo. Here it is.


Ingredients:


2 cups of glutinous rice

1 cup water


Procedure:


Mix glutinous rice and water until you reach the consistency. Just add a little glutinous rice if the mixture is too wet. Knead for awhile and make your bilo bilo.

How to make Milk Pandesal

Pandesal is a Filipino dinner roll that is available during breakfast even anytime of the day. Many bakeries in the Philippines are selling hot Pandesal. That's why we Filipinos really love pandesal because it’s hot. Nowadays they add flavor to the pandesal recipe, there is ube pandesal, matcha pandesal and many more flavors. I just decided to make a Milk Pandesal. Milk bread is popular in Japan for the soft, pillow texture of the bread, why not make a pandesal like that, pillowy. I know pandesal being known for siksik texture pandesal. With my recipe I retain the siksik texture but make it pillowy pandesal. Alright, here is the recipe.


Ingredients 1 3/4 cups all purpose flour 2 cups bread flour 1/4 cup powdered milk 1/2 cup sugar 1 1/4 cups water 2 tsps yeast 1/8 cup shortening 2 tsps salt Directions: Preheat oven at 350°F. Disolve yeast to 1/3 of the water and set aside. In a medium bowl sift all the dry ingredients and then mix. Add the yeast and the rest of the water, and mix. Then transfer the dough into a surface to knead for about 4 mins. Add shortening to the dough and knead for about 10 mins. or until dough developed gluten. Until smooths. Then transfer to a greased bowl, cover and let it rise for about 1 1/2 hr. Punch down the dough and use rolling pin to flatten and roll the dough and cut into pieces. Arrange the pieces of pandesal to the pan and then cover and rise for about 30 mins. Then bake it for about 13-15 mins.

Let’s do our share helpingthe government even if it's small things we contribute that will benefit the government and us all too.

Super Easy Beef Taquito Recipe

 

Beef Taquito, my husband and I love to eat Beef Taquito, the snack that we always get

from Stripes, a South Texas convenience store. I really like Stripes taquito because of the

crunch of the corn tortilla they used.


Today I made our own beef Taquito, I searched for the recipe and it’s easy to make.

I just bought a regular mini corn tortilla but Stripe’s taquito tastes like Dorito chips.

Anyway here is the recipe for the Beef Taquito I made. Super easy to make, super easy

to follow. You can add more spices like cummin, chilli, paprika.

Ingredients:

1 lb chuck roast beef

½ salsa

Beef broth

Direction:

Put beef, salsa, and beef broth into a pan.

Simmer for 4 hours or more until it’s tender and it will come out shredded beef.

After simmering for 4 or more hours, take out the juice and shred the beef with a fork.

Then, chop the beef into tiny pieces and set aside.

Warm the corn tortilla

Prepare a glue for corn tortilla a mixture of 2 tbsp flour and 1 tbsp water.

Prepare the corn tortilla and put beef filling then put floru and water mixture on the

edges of the corn torilla.

Preheat the oil at 375° then fry the taquito until it turns brown.

Pineapple Cherry Surprise Mini Muffins. The original recipe is Upside Down Muffins from

Taste of Home. I’m interested to try these  recipes because I love pineapple but I don’t have

yogurt. I substitute yogurt for sour cream. I know sour cream will be a good substitute for

it. The recipe’s instructions are half the cherries and put on top of each batter muffin, because

I'm not paying attention I put whole cherries first before I fill the muffin pan with batter. It

came out perfect for me even though it didn’t come out as a Pineapple Upside-Down Muffin,

it came out as a Pineapple Cherry Surprise Mini Muffin as I call it. The recipe has  good taste.

Quick Meatloaf Recipe




Quick Meatloaf Recipe but it’s the best. It’s not a complicated meatloaf recipe, just

combine all the ingredients and bake. A meatloaf dinner plate is ready for a short

time no hit or miss for this ingredients all been tested and proven delicious. A

meatloaf-licious recipe that your family will enjoy. Here is how to make delicious meatloaf.


Ingredients:


1 1/2 pounds ground beef

1 egg

1 cup finely chopped onion

1 cup milk (evaporated milk)

1 cup Italian bread crumbs (Progresso)

2 Tbsps. brown sugar

1/3 cup catsup

2 Tbsps. mustard


Directions:


Preheat the oven at 350°F.


Grease the 2 loaf pans and set aside.


Combine all the ingredients in a big bowl.


Transfer the meatloaf to a greased pans. Pour catsup over the meatloaf.


Bake the meatloaf at 350°F for 1 hour. If you want your meatloaf a little bit dry just add another 10 mins.

Blueberry Bread with Sour Cream

Blueberry Bread with sour cream has good taste. It’s hard to look for a good tasting blueberry
bread or cupcake recipe. This blueberry bread with sour cream I got from all recipes website and I just want to share with you. I tried it, followed the recipe and it came out really delicious blueberry bread. know it will taste good because of sour cream, you can’t go wrong when you have sour cream in your baked goods. Sour cream makes your baked goods moist and sour cream create good taste.







Ingredients

2 cups all purpose flour
1 tbsp. baking powder
1/2 tsp salt
1 large egg
1 cup sugar
4 tbsps. unsalted butter, melted and cooled
1 1/4 cups sour cream
1 1/2 cups blueberries

Directions

Pre heat oven to 350°F. Prepare the 2 loaf pans.

In a meadium bowl whick flour, baking powder and salt. Set aside.

In another medium bowl whick egg and sugar until sugar dissolved, then add melted butter, add sour cream until combined.

Pour the batter to the loaf pans and bake it for 30 mins, until it's fully done.

Creamy Tuna Hand Pie Recipe





Creamy Tuna Hand Pie for family snack. My creamy tuna hand pie is creamy and delicious because of mushroom cream. A combination of delicious tuna pie filling and pie dough that melts in your mouth. Tuna pie recipe is a snack for all season. Here is the recipe.

CREAMY TUNA HAND PIE RECIPE

Tuna Filling

Ingredients:

1/2 cup oil
1 cup diced potato
1 tbp. galic
1/4 cup onion
1 cup diced carrots
1/4 cup milk
1 pc. red bell pepper
1/4 cup water
1/4 cup raisins
2 cans albacore tuna 255 mg
1 can cream of mushroom
4 tbps. mayonaise

Pie dough

1 1/3 cups flour
7 tbps. cold butter cubed
1 egg yolk
2-3 tbsps. of cold water

Procedure

Filling:

In a sauce pan pour oil and fry the dice potato until the potato turn brown. Take out the browned dice potato and set aside. Pour some of the oil to a bowl.

Saute the onion and garlic.

Then add carrots, milk, bell pepper, water and raisins until carrots are soft.

Add the tuna, cream of mushrooms and fried potota.

Continue stirring untill fully incorporated.

Remove the heat then transfer the cooked filling to a bowl, let it cool. When it cooled you can add mayonaise.


Pie dough:

Add all pid dough ingredients into a blender until blender turns clean let the dough refrigerate for 30 minutes, then it will be ready to use fill up with tuna filling.

Pre-heat oven for 400°F. Then bake the tuna pie for 15 mins.

Watergate Salad Easy Dessert No Bake Recipe



Watergate Salad is an easy dessert recipe anytime of the day. It's a dessert that no bake needed, kids can join doing the dessert a family dessert that really delicious. Some people call watergate salad as fluff dessert. Here is the recipe of watergate salad.


WATERGATE SALAD

Ingredients

1 can 20 oz DOLE crushed pineapple undrained
1 pkg 3.4 oz JELL-O Pistachio Flavor Instant Pudding
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup chopped walnuts
1 tub cool whipped topping

Directions

Mix first 4 ingredients in a large bowl.

Stir in cool whipped topping

Refrigerate for 1 hour.

Enjoy!!!
